We stayed in Apex whilst having a weekend break on May day weekend. Its a lovely modern hotel with well appointed rooms and friendly staff. Maybe a wee bit out from the centre so have to take taxis. Really great, friendly service. The rooms are well appointed and very clean. Breakfast was lovely. Couldn't be closer to Tower Bridge. Highly recommended. A short walk from Tower Hill Tube station. Lots of coffee shops and a couple of restaurants close by if you don't want to eat in the hotel.
