Description: The Grand Hôtel de Bordeaux & Spa will embrace its historical heritage and relaunch its 19th century brasserie under its original name The Bordeaux.Opened in 1850 in the Place de la Comédie square at the heart of the city, the original Café de Bordeaux with outdoor terrace overlooking Le Grand Théâtre, immediately found a special place in the hearts of the Bordelais people. Frequented by legendary guests including French novelist Victor Hugo, today it is the only restaurant that remains from „old Bordeaux‟. Reminiscent of the grand brasseries of the 19th century, the thoughtfully-crafted restoration will honour the original patina of The Bordeaux.Overseen by Executive Chef Pascal Nibaudeau, Chef Olivier Garnier will craft a menu for this Belle Epoque-style brasserie that will feature only the most traditional of French dishes and wholesome local delicacies. With a passion for creating recipes that combine both modernity and tradition, Olivier joins the culinary team at Grand Hôtel de Bordeaux & Spa from Le Bistrot’Nomik and has previously worked for two Michelin-starred restaurant Les Ambassadeurs at the Hotel de Crillon in Paris. The Bordeaux has been transformed into the perfect setting for an intimate dinner or private meeting, with optional paneling that can be erected to create an additional level of privacy. Big cuts of meat such as wild boar and suckling pig, typical of the South West region of France, can be served on request and shared by large groups dining on the first floor of the brasserie for a convivial and relaxed atmosphere.A contemporary twist on wines by the glass, The Bordeaux will offer its guests the rare opportunity to enjoy leading Bordeaux grand crus served from magnums and double-magnums, an opulent reminder of 19th century The Bordeaux.“The Bordeaux at the Grand Hôtel de Bordeaux & Spa has forever been a timeless centrepiece in the Bordeaux community,” said General Manager Yan Vacher. “We look forward to reviving this concept which will lovingly highlight the hotel‟s ties to the history and culture of Bordeaux – and which will provide a relaxed yet glamorous setting for guests and Bordelais residents to share a meal with friends and family.
