I go when it isn't busy now, since the staff seem to need to get it together when it is busy. I'd rather not hear about staff persons roommate or date when I'm paying 10-12 bucks for my lunch.

Not quite East by South West! This place is expensive and is a good second choice when sushitarian is booked. Best Sushi in Durango, maybe the best anywhere. The restaurant can be a little cold so be sure to bring a jacket.
