Hotel restaurants are typically a commercial mess but Roux was a surprise convenience. The pickled beets with goat cheese app is wonderful. Friendly staff and comfortable right inside the Hilton.

The staff was very attentive and friendly. Food was ok. We went for dinner and, while there was nothing wrong with it, I'd expected better for the fancy atmosphere/price. Personally wouldn't go back, but it's probably just a matter of personal taste.

A breakfast buffet at a hotel is not something one writes home about unless its the breakfast buffet at Roux, in the Hilton Biltmore Park. I've only had the breakfast but it is not to be missed. Great staff onsite. I commented how good the salsa was and mentioned I would love to have the recipe. The exec. chef came out and brought a copy.

My husband and I went to Roux Asheville in the Hilton Hotel at Bitlmore Park for Thanksgiving dinner. It was fabulous. The buffet served all of the traditional dishes with some others that were great. My favorites were the cornbread stuffing and the sweet potato casserole. Roux defeats most expectations for hotel restaurants. Located in the lobby of the Hilton Hotel in Biltmore Park, Asheville it offers well prepared dishes at prices that seem reasonable considering the quality. Service was excellent and friendly. My only complaint is its location, right in the lobby. This gives it an ambience reminiscent of an airport diner.

Though we only had breakfast there during our Biltmore trip the waiter/waitresses & chef were exceptionally pleasant, prompt and attentive to a very busy holiday crowd.

The food and the staff were great. We did the breakfast buffet every morning because it had everything we wanted, omelettes to order, waffles, blueberry pancakes, etc. No complaints.

Worth the time - great value and selection! Definitely go for the Buffet Breakfast - just wonderful!
