  "I read about Hawk's in the April 2013 issue of Louisiana Kitchen magazine and was intrigued with the whole process of the crawfish "cleanse"... I mean after all...these are mud bugs! Well, we packed up Saturday and made the 3.5 hour trip to check out these "clean" crawfish. We got to Hawk's ar..."ound 4:45 in the afternoon. They open at 5:00 ~ and there was already a line at the door waiting to get in. When the doors finally opened and we were seated, more than half of the restaurant was full. By 5:45, there was not an empty table in the place. We started with 5 lbs of spicy crawfish...now you can order "regular" (no spice), "spicy" (spice on the outside) or "extra spicy" (with it's own jalepeno for an added kick of flavor). I will say, that was the cleanest, plumpest crawfish I have ever eaten!!! It will literally melt like butter in your mouth.   "Clean. Delicious. Worth the Drive. Sure, there's the whole "experience" of a REAL Cajun restaurant--well-seasoned food, relaxed atmosphere and you better have a GPS if you're gonna find it. But let's face it. It's a restaurant. In the end, it's all about the food. And Hawk's doesn't disappoint...". Crawfish so clean they look like they were scrubbed with little brushes--when they're THAT clean, the buttery richness of the meat is the first thing you notice. You can choose the level of heat---since I'm from Louisiana, extra-hot is just right. The staff is attentive and genuine and we've never been left with an empty glass or a full tray of shells.
