We went to Symi for 2 days without a hotel reservation, and managed to find a spot in Hotel Fiona. It's a long climb up to Chorio, about 350 steps I think, but what you find at the end is beautiful. The owner of the hotel who checked us in was friendly, and even though he didn't really speak much English (much better than our Greek though), we managed to understand each other just fine.
We paid 65 Euros per night for a double room, and the view alone was worth the price. The room was very clean and pretty - much nicer than what we expected to find. We were comfortable both nights - clean sheets, clean towels, and an amazing balcony. The bathroom is small, but everything works. The AC wasn't very strong, but did the job.
The breakfast is simple but delicious. I read some complaints about it on Trip Advisor, but it depends on what you're looking for in a family run hotel. I prefer less variety, more taste, and that's what we got.
For first timers in Symi, I think the Chorio area has more character than the harbor, where there are too many tourists (and as many restaurants to rip them off). The Chorio area is more local, unassuming, and fun. Check out Taverna Zoe near Hotel Fiona - incredible food! And if the steps are daunting, you can always take a bus from Pedi - leaves every hour until 11pm. 1 Euro per person.
