We got to know more about life on the island, local cuisine, and the native plants Nicole grows in her garden, like thick thyme. We also got to know our fellow classmates as we worked together to prepare our meal, which we then enjoyed on a beautiful terrace with a stunning view over St. John’s. Overall, Nicole’s table is one of the most memorable experiences we’ve had while travelling and it would be the first thing we’d book if we were to return to Antigua. - Michael D0 contributionsCooking in Paradise - we loved being JerksThis was a return visit - we had cooked with Nichole “BC” (before Covid) and were happy to be back. The location is beautiful, close to and easy to get to from the port. The gardens surrounding the house are filled with well-tended succulents and inside, plenty of orchids. Nichole’s home has a very relaxed ambience, putting you in the right mood for a really enjoyable culinary experience. She does an excellent job of finding ways to involve all participants in the class, from serious cooks (like us) to timid “wanna-be’s.” We always learn a great deal about the food culture of Antigua and other islands and appreciate how islanders worked with and adapted to both the bounty and limits of food available to them. The Jerk marinade was awesome! It doesn’t come from a jar, and the accompaniments - rice & beans, pineapple salsa, pumpkin fritters and rainbow salad - made for a memorable meal. It was remarkable that we could eat it all, considering that before the meal, we gorged on plantain chips and zesty garlic-lime dip. They are more addictive than any potato chip you’ve ever eaten! The meal finished with easy-to-make individual coconut tarts, and of course, there was rum punch with the meal. The taxi driver picked us up at the arranged time, and was treated to a coconut tart. We are only sorry that when we return to Antigua in 2026, time constraints of our cruise prevent us from enjoying another cooking class at Nichole’s Table.Written 7 February 2025

A day cooking with Nicole was an awesome experience. Prior to arriving the communication was excellent. At one stage I was the only one attending so Adam (Nicole’s husband) did his very best to rearrange my day. After many emails we managed to stick with the original date and all went well. The menu was lovely, Nicole went the extra mile when I asked the difference between fried plantain and tostones, she not only explained the cultural origins (tostones was a Spanish influence) but proceeded to talk and walk me through making tostones (not on the menu) so the group could taste the difference.
The food was excellent, all cooked by the group under Nicole's tuition.
Adam took the group for the rum tasting, when he learned I had drunk some beer d the rums on show he offered alternatives to make sure my experience was new.
Nicole’s and Adam’s house is a perfect venue, high up, overlooking the beautiful Caribbean Sea.
It’s not a cheap activity but when you consider the cost of eating out in Antigua and the wonderful experience you get it is well worth the dollars.
I fully recommend Cooking with Nicole, book it, you won’t be disappointed!

We booked the rum cooking class at Nicole’s Table in January and spent a very entertaining day in a wonderfully family atmosphere. We were warmly welcomed by Nicole and felt directly welcome. Besides us, two other couples participated and the group size was perfect, so that everyone could contribute well with the preparations and cooking and you still had time for a short chat in between. Rum tasting with Adam was also extremely entertaining. Time flew by and at the end of the day we felt like we were saying goodbye to friends. If you want to take a look “behind the Caribbean scenery” in addition to the white beach and turquoise sea, Nicole’s Table is sure to have a lot of fun. You don’t need any prior knowledge, kitchen-tested people don’t necessarily learn new “techniques”, but can certainly get ideas and suggestions. Speaking and understanding English is mandatory.

Highly recommend Nicole’s with Rum Cooking Class in St John, Antiqua. It’s a great way to spend 4-hours , where you walk away after one of the best lunches you’ve ever had and one that you prepped and made. Nicole is an amazing teacher and her gift, well loved too for cooking and sharing that passion with others is very evident. I wish I could have taken all the courses offered and hope that one day I’ll be a repeat guest at another cooking class. Her home is gorgeous, including the veranda and views that overlook the island. It’s such a peaceful to be on the island, and even if you are not a cook or familiar with being in a kitchen. Nicole is patient and has a way that makes you feel at home. She shares her passion about cooking while teaching you how to make island dishes with rum. My husband who was on the fence in taking this excursion on our own from a cruise port stop stated it’s his all time favorite over 10 years of cruise ship out excursions I’ve booked. Every dish is something that you can easily make from home. I suggest that you pay attention as to ingredients and how you prep but you also get the recipes and directions. It was well worth the cost too. If you get a chance where you can book private class or book as a group with friends I’d recommend that too. I will forever remember my time at Nicole’s house and the delicious food that we made and ate in the most picture perfect setting.

My spouse and I visited Nicole’s Table on 12/23/2022 and were impressed with the stunning views and friendly atmosphere from the minute we walked in. We were greeted with an offer for some passion fruit juice or a cold glass of water upon arrival and then were able to relax for a bit and enjoy the beautiful patio as we waited for the rest of the participants to arrive. It was evident from the start of our Cooking with Rum Class that Nicole is an extremely talented chef and that she was going to make our day fun and engaging. We were able to enjoy our low key instruction with another couple and were fortunate enough to have an extended, multi-generational family (some who were from Antigua and still lived there) also join the class. As we all tagged team and made our way through our recipes with Nicole and her assistant Iana we snacked on Nicole’s Tostones with a yummy dip and then got to a point where our group was able to continue to join in with some of the finishing touches on our meal or take Nicole’s husband, Adam, up on an offer to do a rum tasting. We choose the rum tasting and it did not disappoint. Adam is knowledgeable and passionate about rum and the island of Antigua. He cleverly mixed in facts, along with stories to make the rum tasting entertaining. After the rum tasting our food was finished and we were treated with a whole table full of delicious food on the patio — Sweet Potato Soup with Rum, Rum and Brown Sugar Chicken Thighs with Onion Jam, Red Beans and Rice, Rainbow Garden Salad, Iana’s Pumpkin Fritters…and of course, Nicole’s Butter Rum Cake! My mouth is watering for all of these again as I type this. We would highly recommend this to anyone, but particularly to those who enjoy cooking and want to enjoy an experience unique to the island of Antigua.

Nicole and Adam welcomed us into their beautiful home with warm hospitality. Our Cooking with Rum meal included 7 dishes, each designed for us to participate in the preparation start to finish. The 4 hours flew by as we learned cooking techniques, the recipes, had a rum tutorial and tasting with Adam, then finishing the experience enjoying the company of new friends, drinking rum punch, and savoring the delicious meal. Adam was especially gracious in sharing his well curated rums, ensuring everyone left having tried something new and unique. Nicole’s explanations of the recipes were easy to follow, and now to remember, leaving me eager to cook these new dishes for family and friends. We look forward to attending another class with Nicole the next time we return to Antigua.

An experience not to be missed and we can't wait to come back for the next one! Nicole and Adam are brilliant hosts. Set in their beautiful breezy and scenic home with vibes of soft island music playing we were guided by Nicole through each recipe and prepared everything as a group. We made some new friends and learned about how rum can add a depth of flavour to dishes from savoury to sweet. While things were simmering away, Adam did a lovely Rum tasting with us on the breezy patio. And the best part, the food was delicious!! 😋. We'll be back for more fun, friends and food for sure! Highly recommend this for visitors and locals.

What a fun, interesting and delicious day! Not your run of the mill side excursion. Nicole and her hubby welcomed us into their home and made us feel like family. We cooked together and chatted like old friends. Her hubby gave a very interesting and 'spirited" talk and sampling of different rums. We will definitely choose another of her offerings when we are back.

Nicole’s Table in Antigua and Barbuda was hands down the highlight of our trip! From the moment we arrived, we were welcomed like family. The setting alone is breathtaking — perched up in the mountains with panoramic views of the city and the sparkling Caribbean, it felt like we were on top of the world. Nicole and her husband are two of the kindest, most genuine people we’ve ever met, and the way they run the class makes you feel like you’re cooking with old friends. We did the Cooking with Rum class, and the surprise rum tasting halfway through? Absolute perfection! The food, the atmosphere, the company — it was all incredible. If you’re in Antigua and Barbuda, do yourself a favor and book this experience. It’s not just a cooking class — it’s a memory you’ll treasure forever!

If you are looking for an amazing experience in Antigua I would highly recommend Nicole’s Table. Gracious hosts, an amazing view and the best food we’ve had since we’ve been in town. Nicole does a great job steering you through the cooking process while sharing information about the West Indies. And the old fashioned rum punch her daughter made is excellent. While the food was prepared we had a rum tasting with her husband Adam. It was a blast and he does a great job explaining the various types of rum and their history. And another big shout out to Iana. She helped us cook the dishes and demonstrated the pumpkin fritter recipe. Do not hesitate to book. You will not regret it.

Imagine you are friends with a chef who invites you to her home to prepare a meal and show you how. That is the setting you will find yourself if you attend one of Nicole's classes.
