Our Viator tour began at 10:30 at the Accedemia - then we broke for lunch - we opted for lunch included - they gave us a voucher for a great place nearby. We probably had 2 -3 hours between the end of the first tour and the start of the second. Everything was close by so it was great!
I don't know if Viator or other companies offer different times, but this tour was excellent and I highly recommend it!
Yes, you can stay until the museum closes, probably another 1h after the guided tour. If you are very interested in art and you may imagine to spend half a day or all day in the Uffizi then I recommend an unguided tour.
