The public entry village you can go to, but if you want to meet actual local people in local villages you absolutely need a guide. I recommend the home stay for a totally unique experience. Home cooking, traditional houses, and your guide can help translate for some wonderful interactions. If you go with Hill tribe, the guide is superb at figuring out what you are interested in. It’s a more rugged experience but definitely a trip highlight. I tried betel nut, gave water buffaloes salt water and walked to a village spirit house. Those were activities that the guide figured out we would like.
In general, when traveling in Asia... I’ve never had problems eating where the locals eat or in their homes. I run into trouble nearly every time I’ve eaten at a big name hotel or other tourist spots. Avoid buffets!!!!
