The outer canals are great to just walk along and take in the life and the lovely architecture. Keizersgracht was great as was Prinsengracht

This is one of many very nice canals which have the occasional bench to sit on and watch the world go by. Canal cruising is great and canal walking is nice also, never know what sort of little shop or café will pop up.
