Our group of seven did the sauce pairing workshop (90 minutes).
The first part consisted of a talk about the family business and manufacturing process, given by one of the young owners who has taken over the business that was started by the family 60 years ago.
I admire their devotion to the traditional chemical-free fermentation process, despite its higher cost and time requirements. The talk was also peppered with personal stories about this hardworking family.
In the second part, we received a serve rice and chicken braised in a mixture of Nanyang soy sauces. We also tasted a range of first press and second press soy sauces, a caramel sauce, chilli sauces, sesame oil and kaya (coconut and pandan jam).
The soy sauces are really quite different from what you'd get in the supermarket, with more complex flavours.
Although the workshop tended towards the pricey end, I'm glad we did it as it is a one-off and a good learning experience for adults and children.
This workshop, perhaps combined with a factory tour, would be a good team-building corporate activity (also vegetarian-friendly).
And oh, I would be so thrilled to receive Nanyang soy sauce as a corporate gift.

A friend and I recently stumbled across the Nanyang Soy Sauce boutique on East Coast Rd . After being impressed with the history behind this artisanal, family owned soy sauce business we joined a sauce appreciation workshop with the 4th generation owner of the business, Ken Koh.
We knew nothing about soy sauce and were completely surprised about the all natural process of making the sauce which we thought was similar to the making of wine.
However it was when we did the sauce tastings of the the various types of sauces and the sauces that had been matured for different lengths of time that we really started to appreciate why soy sauce is so important to Asian food.
We found Ken’s willingness to share both his knowledge and time was very generous.
In fact we we were so impressed we bought nearly $200 worth of soy sauce in Nanyang special gift packs which were ideal to bring home.

I have attended sauce pairing workshop with my husband and 2 kids and loved it! Ken was very clear and engaging. I love the history of the brand and different knowledge about soy sauce. Moreover, the sauces are really yummy! We got to try the sauces on chicken and rice as well. the best experience ever!
