Taking a Chilean cuisine class with El café Vinilo’s chef was by far one of the best experiences I had in Valparaíso . This is the only place in the city that introduces participants to the history and culture of Chile and its food.The participants get to cook 5 to 6 traditional Chilean dishes. Gonzalo the chef gives the class in Spanish and English.Pebre, Pisco Sour, Ceviche ( The Chef explains the difference between Chilean and Peruvian Ceviche) Charquican (one of the most important dishes in Chile) Chuchoca de Maíz and Puré de papas con Naranja y menta which is a mi of mashed potatoes with oranges and mint .Before the class starts, we get all the ingredients needed at the local market where you can find all the typical Chilean fruits and vegetables.The class includes enough food samplings for most people to not need lunch afterwards

Gonzalo did not take us to the usual tourist sights on the Anti-tour in March, 2016. As an architect and city planner, we were thrilled that he showed us urban redevelopment areas, new worker housing, and interesting neighborhoods that are not on Free Tour route. Gonzalo made us a great tour of Valparaiso: authentic, individual, not touristic, in English and in Spanish. Gonzalo is an amazing chef and what a great time we had with him on the class. We are still cooking his pevre and ceviche all the way here in Singapore, and using all the delicious salts in our cooking :) Highly recommended and represents the wonderful Chilean people and cuisine exceptionally.

Taking this cooking class with the great chef Gonzalo Lara was one of the highlight of our stay in Valparaiso. He gave us a real taste of Chile, helping us preparing typical chilean dishes. Creative, enthusiastic, interesting, thoughtful and also funny, he is a amazing teacher and an excellent chef!

We spent all day with Gonzalo learning about Chilean cuisine. We went to an open air market and bought all the ingredients for our meal. Gonzalo loves the city, the people and even the dogs of Valparaiso, and it shows for every minute of this very personal and intimate "anti-tour". The tour was great! The duration was initially supposed to be 3 hours, but Gonzalo took us around for 4. He will bring you to the various Cerros of Valpo, with a final stop to the best Empanada in town. He is a very nice guy, he loves his city with its culture and traditions and you can feel that....
