Taking a Chilean cuisine class with El café Vinilo’s chef was by far one of the best experiences I had in Valparaíso . This is the only place in the city that introduces participants to the history and culture of Chile and its food. The participants get to cook 5 to 6 traditional Chilean dishes. Gonzalo the chef gives the class in Spanish and English.Pebre, Pisco Sour, Ceviche ( The Chef explains the difference between Chilean and Peruvian Ceviche) Charquican (one of the most important dishes in Chile) Chuchoca de Maíz and Puré de papas con Naranja y menta which is a mi of mashed potatoes with oranges and mint .Before the class starts, we get all the ingredients needed at the local market where you can find all the typical Chilean fruits and vegetables. The class includes enough food samplings for most people to not need lunch afterwards

Good alternative view of the city. Agree price beforehand or else haggle at the end as started off very expensive.

Gonzalo did not take us to the usual tourist sights on the Anti-tour in March, 2016. As an architect and city planner, we were thrilled that he showed us urban redevelopment areas, new worker housing, and interesting neighborhoods that are not on Free Tour route....More

Gonzalo made us a great tour of Valparaiso: authentic, individual, not touristic, in English and in Spanish. And we met lovely Chilean people, for example the ladies from the empanada shop (best empanadas ever!!!), the baker and his family (best bread ever!!!) but I stop...More

Gonzalo loves the city, the people and even the dogs of Valparaiso, and it shows for every minute of this very personal and intimate "anti-tour". Not perhaps for those who prefer the bland impersonality and predictability of official coach tours (if there are any such...More

My husband and I got to know Valparaiso through this trip in a way not possible on our own. We did not have or want a car in this city of narrow, steep, windy roads. Gonzalo navigated the canyons and hills expertly and showed us...More
