For those interested in gastronomy, this is a fabulous place to enjoy olive oil tasting and learning about the production process as well as the beauty of Úbeda and Baeza.

Fascinating historical detail

This castle dates back to the 11th century and was subsequently converted from fortress to palace in 1538, by Francisco de los Cobos, Secretary of State to Charles I of Spain, who stayed in the castle. Today, it's the headquarters of one of the finest olive oil companies in the world of the same name. I found the whole place fascinating and well worth the visit.
