We signed up for a tour which including an overview of the herds used to make cheese, how well they are treated, the history and a tasting of the showcase cheese, caciocavallo. (Note, it is not at the main store in town and its a bit of a wlak from the store, so if you have a car, take it.) They were gracious hosts and you will have the ability to purchase cheese after the tour without having to visit the actual store in town.
