Depends on what u like to do. There's a wet market section which is open in mornings only. Locals go to buy fresh seafood and meats as well as less common fresh Chinese herbs and dried goods. There you'll see the vendors preparing live frogs and fish for sale from very early 6am to around noon. Most other shops outside the markets open after 10am. Bars open usually early evening. In a way, Chinatown is a bustle of activities through the day and late into the evenings. Enjoy your trip!
