Do you prepare the food using purified water and doyou accept credit cards?

Credit Cards not an issue, for Visa or MasterCard, althouhg Amex is less broadly accepted although I can't recall if I/we tried Amex here or not.
As for the water, you are correct to take precautions, as the Puerto Ayora water is somewhat 'brackish' and although we had no GI issues while on Santa Cruz for almost a week, we did take Pepto Bismol tablets daily, just to be safe rather than sorry.
Credit Cards are vastly accepted, but in some cases you will need cash for example for water transportation. About the other question people cook with purified water as well so you dont need to worry. ONly take care on the mix of seafood you make.
They accept credit cards and I had salad without any issues. Furthermore, I didn't have any stomach issues at all on the island which is rare for me.
As the other traveler mention, credit cards are accepted. I can't be sure about the water, but I had a salad and had no problems. The town is heavily reliant on tourism, economically, so it is in their best interest to ensure their clientele are healthy & happy. We did notice big water trucks and a huge bottled water industry in town, so unless you have a compromised immune system, I think you'll likely be okay.
