Would this serve as a good base camp for day trips in the Finger Lakes region? We have no definitive plans in terms of what exactly we want to see/do in the area. We plan to hike and enjoy nature. would also enjoy brewery tours, Farmers markets, museums/local history sites.
I love Stony Brook, but for your interests, I agree with those above who have said that Keuka Lake State Park may be a better base camp for you. There is a single brewery in Hornell, as well as a cidery in Canisteo, but that is about all you will find within a half an hour of the park. There are more as you move centrally within the region.

I have to agree with Mark S.; Keuka State Park would be a better "base camp" as it will put you closer to the center of the Finger Lakes. I love Stony Brook and hike there often but, you're going to have to travel quite a distance to get to attractions. Definitely put Letchworth on your agenda!
The Finger Lakes Region covers quite a large area. If you are planning on camping I would look more around Keuka Lake. The NYS park is a nice campground with many more wineries and closer to more activities. We live quite near Stony Brook and it is very pretty but you would find more to do heading a bit further east. Keuka Lake and Seneca Lake have lots of wineries, restaurants, and some microbreweries too.

In terms of hiking and enjoying nature this area is one of the best un New York State. There are several parks in the area, the largest and most beautiful being Letchworth which also has several large waterfalls. I am quite sure there are also the markets and local history although that isn't my primary reason for visiting the area. I do know that you won't be disappointed with the scenery.
Great question! Base camp could mean a couple of things, of course. Nonetheless, my honest direction would be to call the KoA in Watkins Glen, NY. Really neat little town! You would be right in the heart of the finger lakes region. Much much closer to wine country. Just ask for what you are looking for! Privacy, seclusion, etc... see if they can provide it. Like you I really enjoy a road trip and look for places to camp along the way and explore locally. I always go KOA
