I am very interested in visiting, and I have read all the reviews but I am wondering if it is still worth a visit as we are not hikers, very happy to do walks and would love to see as much as possible of the area. Advice would be appreciated

If you're not a hiker you still can like Pachamama. There are beautiful views in the area and if you don't like to hike, you can even rent a mule to climb up the canyon.
By bus you caan visit a spot to watch Condors, so my recommodation is: 'just do it'.

You should go if you want fantastic views of the Andes everywhere you go and an incredibly peaceful experience. I was able to do some walking around Cabanaconde after I got very sick and had to bail on a trek before we started (still top 5 experiences of my life). I had friends who were very satisfied with their bus tour they took from Arequipa through Colca Canyon and back. They did literally no hiking and enjoyed the views nonetheless. So you can find something that fits you, just make sure you leave the time for it. We planned everything of ours a day before in our hotel at Arequipa.
The Canyon was amazing with all the Inca terracing, the steepness of it and the experience of being on the local bus with the locals. We only spent 2 days (1 night) there but if I went back would definately go back to Arequipa and Cabanconde and I liked Chivay too. You don't need to do big hikes, one of the lookouts is 20 mins from the main square and not strenuous. We met some locals who chatted away to us in Spanish (unfortunately my Spanish is vey basic) but they were so friendly. Its all part of the experience of seeing a country. And would def recomend an overnight stop on one of the Lake Titcaca islands.
