Hi. If you go on the breaks especially for families then yes, children can take place on all activities and there are also activities especially for children - childrens assault course, Segway, soft play etc. With regard to the childrens clubs then yes, at least one adult has to attend with them. And yes - there is a childrens menu.
I went last Easter with all my family including 8 year old grand-daughter and 6 year old grand-son and they absolutely love it. Your daughter will love the evening shows performed by Potters Theatre Company.
I can not comment on the dance/exercise breaks as I haven't been on one but don't hesitate to call Potters - they are so helpful and their customer service is second to none.
If you do decide to go if you quote code GibsonSG62RF you will receive £25 discount per adult and £10 per child.
Have a look at the Potters Resort facebook page - there are lots of regulars on there who can advise you.
