It's 7 metro stations.

From bastion hotel you need to go to over Amstel metro station, need to walk 8-10 to the metro station.

Then take the train to central station which is 7 stations from there.

Most canal tours are in the city center around the central station. This hotel is by the outskirts by the ring road. But there is metro station close that leads to city center.

There is a convenient store pretty much in the parking lot of the hotel where you can get basics (chips/crisps, other snacks, bottled water, milk, cokes), but I don't think there is much else.
