I think dogs are allowed. I know they aren't allowed in the main dining area but are allowed in the bar. I'd ring the hotel to double check. They were very friendly and accommodating so hopefully you'll be lucky!

It depends on what your definition of easy is! Newcastle is a small village no more than a quarter mile form end to end and a stroll around the cottages and down to the river can be very peaceful. Surrounded by tall hills either side means there are spectacular views along the valley from the tops which are accessible by car or you could try a stretch of the Offas Dyke which runs from just outside the village by the church and off up the hillside. It's probably at the upper limit of "easy" though.
Clun itself can be walked along quiet lanes via Whitcott Keysett and is about 3 miles away with teashop, gallery, museum and pubs but check opening days first. If you do decide to come, bring your binoculars for the wide variety of birds to see from goldcrest to red kite. I hope you enjoy your trip.
