I visited Domain Bayssac with eight fellow travellers for a seven day stay at this remote and beautiful region of France with great expectations. Sadly most of them, apart from the situation, were unrealised. We found a pearl in the Cevennes, an old farmhouse of centuries ago, renovated in a very beautiful way, using local materials, that still gives you the impression of a farmhouse! After a treacherous drive through the rain around winding hills and narrow bridges, we arrived very late at Bayssac. Phillippe and Sylvie had very kindly waited up for us and kept our (delicious) dinner warm. From the reviews and the website, I was sure that I would love this place. If you want to really experience the life of the people through history, not just in a museum but by living a bit of it, this is the perfect place. Phillippe and Sylvie are totally charming as they welcome you into a true farm to table experience. This is not located where groceries are an easy trip down the street...
