Went there for the half-marathon end of November 2013, so place was full and Siem Reap generally a bit busier than usual. Great showers, nice pool, really nice staff; polite, flexible (I mean in terms of service rather than physical capabilities). And really great eggs.

To answer your question I will tell you as much as I know/have seen as I have never stayed in a B&B room, just looked in to see what are the physical differences. B&B rooms are a) smaller. b) darker, and, c) the attached bathrooms have only half-doors, viz, they start at the height of a person's thighs and end at the top of the chest. Any differences, beyond the physical, are easily read on GB's website. In my opinion, and I am usually unaccompanied, the size and the light and the bathroom retaining the ability to be completely private, of the Superior rooms, attracts me.
