Sure, you can add to your booking the next day. In fact to get more than one night in a Mira Costa harbor view room that's the only way to do it. You will still have to check out of the first hotel and into the second one but you can add as many one night reservations as you want and they'll all be combined in your account.
In order to do a true dummy reservation you need to go all the way through to charging your card to make sure it works. I did just that, then cancelled the reservation a few minutes later. My credit card charged and credited me the same day and there was no FX difference.
Have fun! We loved both hotels! But to be honest for two nights I might recommend staying in one or the other for two nights so that you are not without a room for the second day between the checkin and check out times. But switching is certainly doable.
The piazza view be where right in front of where all the water shows are for disney sea . You should be able to watch most of the shows from there . They set it up well. But harbour view is the best it is t he whole harbour

The only rooms at the MiraCosta that have balconies looking at the harbor are so-called "speciale" rooms on the Porto Paradiso side that also give you lounge access. They are crazy expensive and difficult to book. In my opinion this is the one mistake the architects made in designing DisneySea - not nearly enough balconies. We had a harbor view room without balcony which was quite spectacular but a balcony would really have made it really special.
