this is a superb hotel in a wonderful setting. we received a very warm welcome despite the fact that we had been walking all day and must have looked a bit unkempt! we had a fabulous room. only problem was the price of the food at the restaurant.....I am sure it is FABULOUS....but it was quite out of our price...

Having dined at the exceptional hotel restaurant on a previous trip and again this year we felt confident that the hotel component of this establishment would not disappoint. However, during our stay it was evident that the restaurant is the primary focus for Hostellerie Le Castellas and perhaps at the expense of paying hotel guests. Our standard room was v...

Best dinner we had in the region...inventive, fresh and light, different and sophisticated, this is a restaurant worth whatever drive to reach Collias. Wine list is short but with great possibilities. Sleeping there is an additional treat.

The town appears to be a centre for water and cycling activities. The hotel is tucked away with a separate car park. Breakfast is a choice of two types. We had the more basic one which was perfectly acceptable with good quality local food. Our room was up two flights of stairs in the roof. It had plenty of space....

Beautiful room, spacious, two balconies. Lovely swimming pool area. Attentive receptionist. Really pretty town, we walked about headed to the river, many canoes and people jumping off the rovks into the river. Had a beautiful meal at a French restaurant just down the road- they had a big lovely dog called 'If'. Definitely recommend this place. Once again no lift...

An artist hand has furnished and decorated this Inn. Our room was comfortable and very charming, with a little private garden and a lovely bathroom. The dinner was absolutely delicious and served by very attentive and knowledgeable personnel. We came back for an equally delicious lunch served in the Inn garden. We did not use the spa but we hope...

we were delighted to find this charming hotel as it is one of the few gourmet hotels which accepts dogs accompanying guests. Everything about the hotel delighted us, the very warm welcome from the proprietor, the spacious, spotlessly clean and very comfortable suite, and the excellent cuisine. The chef is a master of imaginative cooking - each course was a...

Very pretty rooms in the old buildings; lovely family service with a superb restaurant, Very much a restaurant with rooms but the rooms are worth a visit on their own. Parking off street which is a bonus in small french hilltop villages.

This hotel is the nearest to perfection I have known. I cannot fault it in any way. The staff are efficiency personified without the slightest trace of obsequience, friendly without being forward, so very refreshing these days. The rooms which are spacious and of which we saw four as we were a group of 8, are all laid out making...

We had a very nice sojourn and hosts were very nice. You have a fantastic patio a dinner room in the old stones. Parking is very easy and private, a plus. Fantastic food. Official Description (provided by the hotel)
Charm and elegance between Provence and Languedoc. The Aparis family has welcomed guests since 1989 in the medieval village of Collias. The Hostellerie Le Castellas is a group of 17th century buildings, restored in the manner of the stones of Vers Pont du Gard and the delightful style of the Languedoc region. Each room is individually decorated in a variety of styles from art deco to art nouveau and even baroque. A touch of modern comfort completes each one. Two magnificent stone vaulted lounge rooms open on to the zen shady garden planted with a variety of species. Below this garden, a swimming pool with jacuzzi is an invitation to calm and relaxation. Here the word pleasure takes on its full meaning as everything is designed for the well being and enjoyment of our guests. Areas for relaxation, original or charming details form a brilliant combination of materials, colours and light. In this utter haven of peace and gourmet pleasures, the Hostellerie Le Castellas welcomes you for an idyllic stay. ... more   less
