The priory of Saint Jean de Bébian is a unique estate of its kind. Located less than 6 km from the A75 motorway, the estate is very easily accessible and particularly well located between Sète, Agde and Béziers, it is a true haven of peace in the heart of the vineyards. The estate is 1 hectare surrounded by basalt walls and consists of a gourmet restaurant of the Michelin starred chef Matthieu de Lauzun, a small hotel with 10 rooms beautifully decorated by the architect Raymond Morel and a swimming pool. The chapel built by the Cistercian monks in 1152 bears witness to a rich and particularly well preserved past. A small century-old olive tree adorns the estate as well as majestic cedars. You can enjoy the magnificent terrace of the restaurant with a view of the park, the chapel and the presbytery where the winegrower monks lived.

Detailed Reviews
It was a real pleasure to walk into this hotel. The grounds are perfect, beautiful planting, lots of different areas to sit and enjoy the surroundings. The pool area is perfect (although there was a large amount of wasps in the water)
The whole styling of the place is a mixture of rustic, modern and old.
We had a ground floor room, number 2. The space itself was very nice, a large bedroom and bathroom. But the reason I give 4* not 5 was for several reasons related to the room; firstly it is just off the reception, so a bit noisy, it is a ground floor room opening onto the path used to access the house, so not very private. It is also a disabled access room, which I understand, but meant we had a toilet where I could not touch the ground, and a totally open shower. So I would recommend asking not to have room 2 unless those facilities are required.
A simple breakfast, which you order the night before, enjoyed in the beautiful grounds.
A very pleasant 2 nights, I would recommend

We spent two nights here whilst we toured this area. Fabulous hotel in a quiet and tranquil setting a short drive from Pezenas.
It has only a few rooms and no other real facilities to mention, other than a relaxing pool area and sun terrace.
The room was comfortable spacious with a well appointed bathroom.
The main reason for choosing this hotel was to eat in the Michelin Star rated restaurant that adjoins the property. Booking ahead is essential. We were not disappointed the food was original, inspired and of the highest quality.
It was a real treat and we were very well looked after in the Hotel by Maud and her faithful companion ‘Micha’!

+1
Beautiful, peaceful setting . The bedrooms are spacious and well thought out with a little welcome slice of homemade cake wating for you in the room. The staff are very friendly and accommodating. The gardens and the pool area are very comfortable, we arrived too late to try the hammam but it looks lovely. Of course the big attraction is the restaurant, De Lauzun - his cuisine is exquisite and the staff are friendly and unpretentious. A wonderful evening with friends.

This hotel, a former 18th century monks retreat set just outside the quaint old town of Pézenas, is worthy of more than a rating of three!!
Why have I given such a rating?
When booking this idyllic peaceful hotel , I had read that there was a Michelin restaurant on site!
What could have been nicer after a five hour drive. Checking into this gorgeous tranquil hotel, a dip in the generously sized pool, a couple of bottles of rose, and then dining under the stars, Michelin style!
Unfortunately we couldn’t do the latter!!
The restaurant was fully booked for both nights we were staying! I’m sorry but this hotel was totally “ out of order”! We booked this hotel nearly five months ago for the two nights, so “bottom line”, and it’s quite simple, why didn’t they email me and ask if we would like to book a table whilst we were staying there? We don’t know their system and how it works, it was all down to them.
We therefore had to drive each night ( no taxis available!) into the local town.
Ok rant over.
The rest of the hotel, it’s layout, peacefulness, and quality of decor was outstanding.
The gardens could’ve been better looked after, and being told we couldn’t have our aircon on in our bedroom due to Covid was a pretty feeble excuse to save a few pennies.
Would I stay again?.....Only if they get their management skills better organised.

We had a wedding at the Chateau next to "Les chambres du Prieure" so the whole place was reserved for our guesses for few nights and on Thursday night we had an event at the restaurant De Lauzun for 29 people. Every one enjoyed the excellent food and the service there in this beautiful decorated restaurant. The dinner was very enjoyable. All our guesses had a wonderful experienced because of the beautiful location with a nice swimming pool, a nice park and much more. Thank you for making this reception at your place so special.

The stay was absolutely marvellous. The hotel as well as the restaurant are fantastic. Incredible friendly stuff, wonderful service. A remarkable experience is also the restaurant. A very well deserved star kitchen. A highlight is the very dog-friendly atmosphere. We will definitely come back.

Nothing is perfect and nowhere is perfect. But Les Chambers de Prieure and the restaurant De Lauzun come close. Find your way to this beautiful old complex -a winery in origin and still in business - and find your way to reception (with the help of the somelier in our case) to your beautifully designed room - and you are on your way to a dinner of the very finest and at a very reasonable price for the quality, creativity and presentation of the food and local wines (have the €27 flight with the 3 course dinner). This is simply one of the most exciting, fulfilling and downright enjoyable evenings of our long and much - travelled lives. Put yourselves in the hands of the hotel and restaurant staff, sit back and enjoy. Nothing is predictable in this place but a bit of bravery carries a reward beyond price and at under €350 for bed breakfast and a dinner to die for (not yet please) that is a price worth paying.

+1
Beautiful room size and shower in the stone. Our room, a Deluxe double, had all the desirable amenities: coffee and tea maker, pool bag, bathrobes and towels, slippers, toiletries.
A real treat.
There is great tranquility, the pool is very enjoyable and breakfast is an absolute gem.
I may have found the fact of having to order it the night before too limiting, but since the products are fresh, I also understand the difficulty of finding it at the last minute.
Chef Delauzun's wife is very kind.
I spent a more than fair amount for two nights.
