Albacore is a fish we get from Baja California that is part of the tuna family, we torch it and add toasted nori before we slice it.
Chirmol  is a traditional sauce made in Guatemala, made of  tomatoes, Serrano peppers and cilantro.
Munak sungolds are tomatoes that are very nice in sweetness and acidity.
