About
Molecular cuisine disassembles familiar dishes and reintegrates taste, flavour, texture and temperature, combining with other ingredients and using new cooking approaches. The concept at Tapas Molecular Bar has been created by Chef de Cuisine Kento Ushikubo. Having majored in Art, Chef Kento's unique background inspires his passion for creative gastronomy, presenting "an art gallery of 14 dishes that stimulates the five senses and the imagination". He takes guests on a culinary tour - with a visual feast like works of art and with flavours from around the world, using tools and techniques that wouldn't be out of place in science labs or artists' studios. To complement the experience, dishes are carefully paired with fine drinks selected by our restaurant's sommelier or meticulously crafted by our bartender.

WOW what an experience. We had dinner for my wifes birthday and this was more then ever expected. The chef created a wonderful warm atmosphere in which he brought to you a wonderful new way of enjoying each food dish. The taste coming with every plate was great and the interactive way of preparing and eating it made it one of the best eating experiences we ever had! Thank you for the warm and wonderful evening, Pim! All in all the location with the special view and drinks and food this is the place we highly recommend.

What an amazing experience. From the setting in a beautiful hotel, the service and attention to detail, the incredible food sensations and the very talented chef who talked us through everything making it all interactive and part of the enjoyment. A fantastic evening which we will remember for a long time. Thank you very much Kento and everyone else who made the experience what it was.

This meal was quite enjoyable! The Mandarin Hotel is beautiful! So if you aren’t staying there, this is a good way to experience it! I’d recommend coming early for a drink with a view! Every dish has a wow factor that you just don’t see at most Michelin star restaurants! It feels like you are part of a magic show of sorts. Chew Ping Chow was interactive throughout the entire meal. He explained everything. I loved that aspect. Learning about the dishes, ingredients, etc. I don’t want to give too many details and ruin the fun! We definitely left satisfied!!!

What can I say, hands down the best meal my boyfriend and I have ever had! The whole meal from start to finish was an exciting journey with amazing tastes and new sensations with every dish, you were constantly excited to see what was coming next. Usually, when we eat multi-course menus there's at least a couple of dishes which aren't to our taste however, in this case, every single one of the 14 courses tasted absolutely delicious. We were amazed with the textures, flavours and inventiveness of the dishes. We really loved learning about the process behind each dish before it was served and watching the chefs prepare. Chef Kento is clearly extremely talented and it was great being able to chat with him throughout the meal. I was very happy to be able to have the mocktail pairing as I don't drink a lot of alcohol and therefore often miss out on the pairing menus. Each mocktail was delicious as well! I was also given a little surprise for my birthday which was really appreciated. We really hope we can come back again someday!

My partner and I dined with Tapas Molecular Bar in 2018 and had a thoroughly enjoyable time. We dined with them for our 5 year anniversary and to celebrate our engagement that day. In 2020 my partner and I planned to revisit Japan and dine here again, for my partners 30th and their dads 50th birthdays, however due to covid restrictions we had to rearrange 3 times. Finally, when Japan reopened we contacted Tapas Molecular bar in October 2022 to reserve a date in April 2023. We were told, that it was too early to reserve and that as we were not staying at the hotel, the earliest we could reserve would be 2 months prior. So, we set up an automated email to email at the exact time and on the exact date they recommended, exactly two months before the date and we were told that the restaurant was fully booked for the date we requested. The policy of keeping seats for those staying at the hotel first is a redundant one. The restaurant only seats 8 guests I believe? And there are no doubt many more guests staying in the hotel at any one time than 8, so reserving the restaurant reservations for hotel guests till 2 months in advance is a bit of a nothing. Also, given Japans service standards and the standards of a 5 star hotel, given our previous contact about dining on this particular date, I would have expected the hotel / reservations team to have contacted me in advance as soon as the restaurant was fully booked to give me as much notice as possible to make other plans, however, we only learnt that the restaurant was fully booked when we enquired a second time, when we’d been asked to, which now leaves us very little time to make alternative arrangements. I will now never dine with yourselves again, and I will never stay in a mandarin oriental hotel. Myself and my family are extremely disappointed and angry by this whole experience and I believe should have been handled much better.

My husband and I had dined at Tapas Molecular Bar during a trip to Japan in 2016 and enjoyed the experience so much that it was the only restaurant that we returned to on this visit. Fortunately the food and overall experience are still amazing and we had a fantastic dinner! Chef Kento is exceedingly charming, entertaining and skilled, and his creativity knows no bounds. We were fortunate to be seated adjacent to 4 delightful South Koreans and the atmosphere was relaxed and convivial, high end dining without any stuffiness. We won’t spoil any of the surprises by describing the menu, plus the menu changes, so it’s not always the same. I decided to try a pairing of Japanese wines since the menu focuses on local ingredients, and was very pleased with them, especially getting to try wines I wouldn’t normally have the opportunity to drink. Who knew that I’d enjoy a Japanese orange wine so much? I couldn’t finish all of the wine but appreciated how well they paired with the food. If you want to be less adventurous, their premium pairing features truly top notch wines, and while more expensive, the price is better than I would have expected for the quality, which is also how we felt about the cost of the meal. On top of all this the views are spectacular! We were staying at the hotel (which we also highly recommend), but if you’re staying elsewhere it’s a great opportunity to see the gorgeous public spaces on the top floor of the Mandarin Oriental. Thank you Chef Kento for another incredible evening!

Our dinner here was in the top three ever. It really is that good. The location of the restaurant in a beautiful hotel is great. the service warm and friendly, but it is the food that takes things to a entirely different level. The skill and imagination shown by the chefs in the 14 course tasting menu is without equal. Brilliant. We loved our meal here, and look forward to returning. Thank you.

Tapas Molecular Bar was such a unique experience during my visit to Tokyo. The intimate setting and interactive dining concept made it feel like a culinary adventure. The food was inventive and beautifully presented, blending flavors and textures in surprising ways. The chefs were engaging, explaining each dish and adding to the enjoyment. It's definitely a spot for foodies looking to try something different in Tokyo!

It wasn’t boring or slow like other high end restaurants such as 3 starred Michelin restaurants. It was entertaining and the dishes were cooked to the absolute perfection. It was entertaining as well with different creative cooking techniques such as liquid nitrogen sorbet which was delicious. I absolutely love this restaurant however you would need to book in advance since there are only eight seats. I highly recommend this restaurant to everyone for dinner. As we enjoyed it so much. Superb view and fun interaction with the chefs! Thank you

This chef turned food elements into fake eggs and buttons so real you could not differentiate a real egg from a fake one- I promise you! One of the courses was a button so delicious I wish all my clothes came with them too. Hands down a fun and experimental, conversational dinner with an excited and engaged chef. Each couple took home a book he had published with his own art that contained a story representing each bite of this delicious meal. My recommendation: do it! Go there!

Many dishes were innovative but yet tasty. I did the mocktail pairing - did not think that much of the mocktails at first (how nice can mocktails be? haha) but i was very wrong. Every single mocktail served was totally a new experience and delicious. Honestly i would come and just have a mocktail night. I enjoyed every drink as much as the dishes. Overall, it is well worth the experience, especially if are you looking for something not just tasty but fun and out of the box.

We really enjoyed this creative and experimental dining experience. Each course was inspired by traditional dishes around the world and were really cleverly presented. It was interesting and fun to watch the food being prepared. The flavours were wonderful & overall a really fantastic experience!

Great and creative meal. An experience you can’t miss .Ambience is good , Utencil is thoughtful and fun , time spending is worthwhile : each dish comes with very creative and knowledgeable ingredients . Most importantly chef is prepared to your dietary requirements .

Awesome presentation and deliciously creative gastronomy type meal. Everything was well explained in both Japanese and English. My biggest complaint is pace. They need to slow it down a bit to make it more enjoyable. Two wine pairings are a bit pricey. First one is mostly domestic Japanese wine makers. The premium flight has some amazing wines on the list but the pours are 1 or 2 oz so you may not find it worth it. Probably better to order a bottle or by the glass especially considering the pace of the meal.

WOW! A truly innovative, imaginative, and FUN dining experience. Every course had a beautiful story, presentation, and of course - tasted phenomenal. Chef was an exceptional story teller and each course was more inventive and delicious than the last. Wine pairings were also fabulous! Highly recommend - such a fun culinary experience!!
