We attempted to go to the sister restaurant that has One Michelin star but it was closed for vacation. We have visited this restaurant on August 15th at dinner with great expectations. In small restaurants,, where the customers are only a handful, chefs usually make it a point to go out and interact with the guests. Food was good - very much fine dining, however our overwhelming memory of the place is the waiter who served us a bottle of wine which was thick with sediment - we called him over to complain, with a Gallic shrug he came back with a coffee filter paper and strained out the bits! This charming and tasteful small restaurant is in the small village of Lastours which is not far from Carcassone. We had read about it on-line as having received a Michelin 1 rating. The bistro to the rear of the main restaurant is very good. We visited on a mid week evening in July and it was very quiet. This restaurant is of the highest quality not just in ingredients and preparation but overall experience.
