After retiring, my wife and I visit here about twice a year.
We love sushi, and unlike our favorite sushi restaurants in the neighborhood, the toppings and rice are small and the sushi is simple and unadorned, which my wife particularly likes more than I do.
Above all, the chef is very personable, which doubles the taste and feeling when he makes the sushi, and increases our satisfaction.
While it's hard to deny that the hospitality on any given day is good or bad, I would say that overall it's a restaurant worth the price.

This was a real experience! Shoes off at the door and we were seated around a 10 seat open table with the chefs preparing the food in front of us. Some of the fish was unreal- we’ve had lots of sushi but never this quality of fish. At 22,000 yen for the set menu it is expensive and we were probably only there about 80 minutes but we ate so much. It was certainly a memorable meal. The proud owner came out and gave us an article from years ago showing it to be the best sushi restaurant in Tokyo!

This place you have to book months in advance. Its omakase style of sushi, very personal experience. The chef was only serving 4 people at a time, and everything is prepared in front of you. For two people, it was around 450 dollars, but it was well worth it if you love sushi!

An orthodox restaurant that sticks to the basics. I love sushi and eat sushi that is highly rated both overseas and at Michelin-starred restaurants. When I want to go back to basics after going to sushi restaurants that use high-end ingredients and techniques, I visit Ginza Kyubey, which is reasonably priced. It is no wonder that many sushi chefs who later went on to receive Michelin stars have trained here. You can sense the tradition that is unconventional and unswayed by trends. The sushi here may be difficult to evaluate for those who give high ratings to restaurants that are simply located near fishing ports or who are used to going to conveyor belt sushi restaurants. In that sense, how you evaluate Ginza Kyubey can help you understand a person's attitude and thoughts about sushi, and it may be a litmus test, so to speak.

We booked in for the lunch at 11.30 as it is apparently better value though we still found it expensive at 36,000Y (for reference the cheapest set menu starts at 22,000 yen). The restaurant is split into two parts, each has a single domed shape table around the sushi chefs. It is therefore very intimate and quiet.
We came with our 10 month old which in hindsight, isn't ideal unless you can be sure they will be quiet/well behaved. Everyone was very nice and polite but due to the quiet atmosphere and the inability to have the pram next to you means you can feel quite awkward about disturbing others.
The food was fabulous and overall it was a great experience. It's a special treat and one we won't forget!
Just as a heads up for those that are squeamish, they bring out live shrimp and kill it in front of you. I guess if you're going to eat sushi then you can't really complain but it's worth noting particularly if you plan to come with children.

We were seated at a counter with maybe a dozen customers and three chefs. Our chef took his sushi VERY seriously and it turned into a lot of fun. The food was absolutely amazing and we left the place stuffed --- as you should for ¥61,105, or about C$570, for the two of us.

All you could ask for in a top grade sushi restaurnat. My wife and I had the basic evening sushi mix at Y11000, our bill with a couple of excellent tokkuris of sake was Y26,000. Really pleasant sushi chef who has picked up some English. Book early - we were lucky to get a same day booking but clearly a lot of people need to book well in advance. Getting a Japanese speaker to book for you will be a big help. Strongly recommended.

Ginza Kyubey is a long-established sushi restaurant founded in 1935. A dozen years ago, it was awarded a star in the Michelin Gourmet Guide.
As one of Ginza's leading sushi restaurants, it is always well-attended.
This time I ate the Anago Bozushi (Conger Eel Sushi) bought as a souvenir, for 2,700 yen including tax.
The conger eel had a fair amount of fat. The conger eel sauce was light in flavor.
The rice had a strong sweet vinegar flavor.
When it comes to sushi from a famous restaurant, expectations are high, even for souvenirs.
I deliberately tried to suppress my expectations and ate it.
Objectively speaking, the taste was average.
If you don't like sweet vinegar, this sushi may not be for you.

We were invited to this famous sushi restaurant, we sat (as one needs to do) at the sushi counter. We had a wonderful time, the food was amazing, the famous chef’s son overlooking proceedings and came by, a very nice and proud man. The sashimi were at another level, too many dishes to mention but everything was excellent. The service faultless and welcoming. Well done and thank you. You deserve another Michelin star!

Sushi and service have always ranked high in Tokyo.
However, of recent, although still very respectable Kyubey has slightly lowered the fish cuts on their "KyuBey" set course menu. Service is still excellent.

My best advice would be to go here the first night or as early as you can in your trip, because after eating here you are going to want to go back!!! It was the absolute best Omakase sushi we had our entire time in Japan. Kyubey himself was there to greet us at the door (what a treat!) and the entire experience was amazing. The chefs were friendly, personable, spoke English. Our chef gave us the option of eating the shrimp fresh or broiled - most Omakase do not give options (I appreciated this). The other restaurant goers were also friendly, we even went our for a drink afterwards with a local Japanese couple we met sitting next to us. But most important, the FOOD WAS INCREDIBLE. The best Uni I had my whole trip, and I'm not even a huge uni fan. In terms of fish to shellfish ratio, I felt like Kyubey served more fish than shellfish which I also prefer w/ Omakase. Anyway, can't say enough positive things. We've been back in California for two weeks and are still talking about it!

Had the omakase 16-piece sushi lunch course at Ginza. It was good but not exactly memorable. Having just arrived from Hokkaido and having had a number of dining experiences at Sushi Dai in the past, we were just expecting so much more at this price point. Especially after all the hype from Buzzfeed and other reviews saying this was the best they've ever had. It was a little disappointing overall for us. Not to knock on the chef or staff but it just didn't feel special enough.
It's not that Kyubey is bad, it just shows how good Sushi Dai is. (If not for the 3hr wait lines)

I have had sushi in many restaurants around the world, including in Japan and this was the best. We had our private Chef who talked us through the dishes in perfect English. He accommodated our guests that didn't want sea-food. His sushi was prepared with the perfect seasoning so that we didn't require soy sauce at all. Perfect (but expensive) experience.

Waren am 2. Evening of our individual 4-week Japan trip in Kyubey. Wanted to make a reservation from Germany through our hotel, but the hotel doesn't do that anymore due to bad experiences, which is understandable. Then we were able to make a reservation directly at the restaurant by phone and actually got 2 seats on Saturdays from 19:45-22:00.
OK, my wife likes sushi more than I do, the "normal sushi" you get in Germany is always a bit boring, but we don't go to high-priced sushi restos in Germany either, so my contribution is that of a "layman". We stayed at Sushizanmai in Tsukiji Market for lunch. For me, that was already well above the "normal" level I know.
In the evening at Kyubey came the realization of what classic high-quality "sushi" is, if you can call it that. Excellent taste, first class ingredients, really an absolute taste experience, for 2 hours. In addition, a fantastic atmosphere, wonderful service of the team, a personable and humorous sushi master gentleman, already watching a delight.
We paid almost 40,000 yen (240 EUR) for 2 people (fixed menu) incl. a few beers, which is absolutely OK for what is offered.
Conclusion: If you want to taste high-quality sushi and are looking for a truly Japanese experience, this is the place 100%.
