This was a great choice for a last night in Cabo. Very well designed and detailed interior. Each table feels private while being part of the buzz. Menu might remind one of Nobu or parts of Katsuya in Los Angeles. Hot stone cooking at table, miso soups, and striking deserts. Sister adjoining space Seared for the meataterians.

Our experience at Suviche was mostly good. The rolls, service, and edemame were all great. Our group's opinion was that for the $500.00 we spent for a party of four, we felt hungry when leaving. We had a good meal with our group of 8. However, there were miscues in service such that 2 of us had finished our dinner when the others entrees arrived.

Even though three of the party were vegetarians and there wasn't a lot of choice for us. The two meat eaters loved the hot stone tenderloin and salmon which they cooked in front of us (not great as veggies but I am sure others would enjoy this novel dish). Our dinner at Suviche was our favorite dining experience during our stay at The One and Only Palmilla. Fresh sushi and flavorful ceviche (especially liked the tuna with watermelon and habenaro.) Not without a few service mishaps but the manager remedied things quickly and the food made up for it.

I was skeptical at first because I'm a huge fan of Niksan and "unusual sushi/sashimi. I prefer to step away from the traditional and I thought because of the Japanese chef here, this menu would be too strictly traditional. ok we were hoping to get good sushi turns out we got excellent sushi! seriously fish was ultra fesh that salmon jalapeno roll was everything! we got sashimis, makis, rolls and the green organic salad has that perfect umami dressing! super spot!
