One of the best dinner we had in our 2 months in Italy. (Matera has a really nice range of restaurants)
The menu is a mix of french and Italian dishes.
The entire dinner was delicious

A particularly pleasant place, exemplary hospitality with a meticulous menu and outstanding courtesy. Very fresh and delicious dishes accompanied by the amazing hostess Isabella who made our stay at the place pleasant are in a particularly cordial attitude and a huge desire to help in any area. The generosity and its recommendations for the city environment are noteworthy and appreciated. Highly highly recommended and adjacent to a great public car park.

I immediately highlight the welcoming atmosphere of the place thanks to the presence in the reception of Giuseppe and his wife and then of Isabella who gives a further aspect of courtesy and elegance to the Bistrot and also valid for
her experience in the world of wines as a very expert Sommelier
The restaurant is certainly a place to go to add another beautiful experience to those you feel when visiting the city of the Sassi to surprise yourself and almost gain small pleasures of the palate and a break of sober relaxation respectively for a menu full of interesting proposals for both first and second courses revisited by the Chef and owner Agostino, who almost seems to propose them as if he had been developing them all his life, sensing his passion and experience embedded within them. In fact, his experience abroad, particularly in France, has allowed him to develop fusion dishes that take up the tradition of Matera Lucanian recipes and raw materials that go wonderfully with sauces and herbs that are linked to tradition.
from beyond the Alps, designed using elements and spices which when combined do not complicate the local gastronomic tradition but enhance it, elevating it from poor cuisine to cuisine for demanding palates.
We start with innovative appetizers with refined fillings that inspire with easy suggestions and curiosity to continue with other dishes. My wife and I savored Cantabrian anchovies with salted butter and extraordinarily prepared caramelized onion and then some creamed cod never tasted before, then we moved on to the first courses with lasagnette with Lucanian pezzente and fusilloni with seafood corbonara in which the fusion style really scores several points in favor of this place which was then amplified with the choice of second courses with confit duck leg with cream of Sarconi PGI Lucanian beans and rack of Lucanian lamb cooked to perfection and last but not least as a couple my wife and I completed the tasty parenthesis with Crepes stuffed with citrus jams and more and of which the one enjoyed by my wife with caramel and salted butter represented the final gem of the dinner. In short, I highly recommend taking a look at this place which offers medium-high quality and innovative dining and which, given the quality of the price, I think is really worth it as it is one of the most interesting references in its sector in Matera.

The place is very special, the food delicious, the staff very helpful and kind.
We will happily return, just being careful not to order another dish even for our little one.
We had asked for a simple pasta with tomato sauce for our 11 month old baby (how many grams of pasta does he eat? Obviously he had almost the entire dish left over, we were charged €10, almost as much as ours... we definitely didn't want a dish as a gift , but for a newborn I think it would have been more than enough to pay €4). Very small unwelcome thing. For the rest... it's a great place

After an initial misunderstanding (Matera restaurants don’t open their doors till a moment before 7.30) from the minute we sat down the knowledge of the food and wines being offered was exceptional, as was the quality and presentation of the food. A very chic space; just as elegant as it was casual, and reasonably priced. Excellent quality - great find - highly recommended

I cannot compliment the owners, staff and chef enough. My wife and I are both vegan and I struggled to find anywhere in Matera for us to eat. I emailed ahead to Burro Salato and they were AMAZING! They created a bespoke 4 course meal for us. They went through the whole menu explaining each dish and in the end we tried all of it and it was incredible. Just fantastic. The staff were lovely, the food delicious and the atmosphere divine throughout. So, so recommended, but especially if you are vegan (and email ahead)!

Wonderful lunch, great service. This restaurant is a little out of the way BUT well worth your time finding it and eating there. The food was so delicious and wonderfully presented. Our host was so kind and knowledgeable it made it more of a pleasure to eat there. The galette and crepe we had for our lunch was wonderful, together with the wine suggested by our host made our meal really outstanding. We cannot rate this restaurant nearly as highly as we would like to.

There is a reason why this is considered the best restaurant in Matera by foodie websites and locals – it’s because it is! It is amazing what you can do with fresh Italian produce in the hands of a classically influenced Italian chef that is passionate about food. It has an international menu with food that is truly Michelin star quality but at a good price. This is a ‘foodie’s’ heaven.
We were lucky enough to get reservations on two nights. Bizarre as it may sound, we nearly didn’t book to come back for fear our perfect evening could not be matched the second time but it not only did but it even exceeded it! It was clear the delight was experienced by every diner on both evenings in the restaurant with gushing praise from every table. The head chef (Augustine) who came out of the kitchen at the end, is a super-star and Isabelle is a fantastic hostess along with her team of Giuseppe and Vita. A truly memorable food experience – that will live in our memory for a very long time.
(We can thoroughly recommend the local Sausage Lasagne, and the Lamb.)

We had a wonderful happy dinner here, we were two couples. One of the restaurant owners attended to us. He was very thoughtful and took the dining experience very seriously while permitting us to be relaxed, enjoy some lovely wine and laugh with our friends. The food was well presented and very tasty, there was nothing we did not enjoy. All in it was our top dining experience in Matera.

We found this amazing restaurant after searching for hours online on where to eat during our visit to Matera. Me and my wife had an amazing food experience! We couldn't even imagine that food could taste so good 💯👌. The space beautifully decorated, quiet and sparkling clean. We had a four course meal and we trusted the advice of Giuseppe who explained everything about the dishes served and guided us through this food journey. Chef Agostino cooked everything to perfection! Top service at a very fair price! We wish had more time to taste the whole menu 😄. We will definitely be back! Thank very much for this beautiful experience!🙏🙏😊😊

Beautiful atmospheric bistro type restaurant. We found on trip advisor and we werent disappointed when we arrived, it stood up to everything on its reviews. A lovely lady and waiter welcomed us upon arrival and made us at home explaining the menu in detail and making suggestions with the food and wine which was gratefully received. The meal in itself was delicious, again couldnt fault a thing. Great little place with great ambience and very popular, it filled up very quickly in the evening. Thankyou we thoroughly enjoyed.

A true 5 star experience for the palate and the soul!
Nice, clean and welcoming place. We were served by the owner Giuseppe who expertly accompanied us in the choice and subsequent discovery of the flavors of his dishes. Excellent raw materials, local proposals revisited with refined and perfect combinations! 10/10 for the crusco pepper and the carbonara fusilloni with amberjack tartare! The French influence is inventive in the proposal of Breton crepes and galettes! Also pay attention to the tastes of the little ones... our 2 year old daughter really liked the pasta with fresh datterino sauce! Good choice of wines! We liked it so much that we returned the following two days too!

Interesting and well-kept place, two steps off Via del Corso in Matera.
Trained and kind staff, very helpful and with appetizing and non-trivial VEGAN proposals, when we asked for dessert they offered us vegan crêpes with strawberries, dark chocolate and almond flakes.
Honest price in line with the type of restaurant and quality of food offered.
Even vegan wines!
The photos are missing starter and main courses which we ate too quickly!

My husband and I stumbled upon this place by chance, located near the hotel where we were staying. A place with attention to the smallest details, attention to the customer, the dishes from the appetizer (pepper crusco) to the desserts are simply delicious. If you want to find a flaw... You can't find it. The bill presented is absolutely in line with what we enjoyed. We would happily return to try other dishes.
