Me and my wife had one day in Matera and wanted to make sure to choose the best restaurant for our dinner. The choice was not easy as there are many nice restaurants in the area, but we went for Bollicine. The atmosphere was cool and modern but also full of history as it’s inside an old cave. All is designed into details even the hand washing basin. Food was sourced locally and high quality. We were expecting to pay more, but ended up paying around €25 each for 2 mains and 2 starters. Amazing service too!

In the centre of a beautiful hill top town, on a warm summer night, we had a most delicious meal at this underground trattoria. The beef tartare with mushroom and asparagus was excellent. Full of flavour. The roast beef was served as thin slices with a horseradish, rosemary and basil sauce. So so tender. The lemon and licorice ice cream was a tasty surprise endjbg to a reasonably priced meal. 100 euros for two with wine.

Restaurant is great and the wait staff excellent! We (4 of us) started with a salad and a local variant of Bruschetta and then shared 2 excellent pasta, one with a meat sauce and the other with a Cod fish purée. Then we had the Cod and vegetable tempura - excellent light crispy batter and tasty fresh. One of best meals we have had in our 2 week visit to Italy. Oh, and the menu items are very reasonable for the excellent food quality. Don’t hesitate to try when you’re in Matera.

We visited this restaurant on recommendation. It is in a great location and has all the possible attributes of being a great venue for a meal. We booked a table for an early dinner and the restaurant had about 6 tables with guests ordering and eating food when we were there. As we were leaving around 8.30pm it was filling up with more diners.
The food was ‘ok’ - nothing special really, however the attitude of the staff left a lot to be desired. Not speaking Italian we asked for information about the menu items and found our waiter to be impatient, curt and judgemental. Items seemed to be slapped down on the table and there were no welcoming tones to any of the interactions.
We obviously didn’t revisit the restaurant and wouldn’t on any future trips to Matera either. There are some genuinely friendly places to eat with good food at reasonable prices. I’d encourage you to seek them out and avoid this place

My girlfriend and I had dinner in this very renowned place. As regards the location and the food, it very much reflected our high expectations but the dining room staff definitely didn't... we ordered 2 starters and then a carbonara (perfect in every way) and it was an aubergine parmigiana. they served us the appetizers and so far nothing to object but the best thing comes when we are served the second course
There was still half carbonara and half parmigiana on the plates and the first waiter approached us asking if he could remove the plates, we obviously replied no after a few minutes (the plates were not yet finished) the other waiter arrived and removed the empty plate without asking also takes away the second plate which wasn't finished and I tell him that I hadn't finished yet as soon as I finish eating with the bite still in my mouth the third waiter arrives and promptly takes the plate away from me... in all of this there were still 2 tables in the room that they were eating the appetizers and several empty tables so the haste used towards us is absolutely inconceivable... I'm also a waiter so I understand the dynamics of the job but we really felt enticed to leave... moral of the story we wanted a dessert each but for L attitude of the staff we preferred to take it elsewhere... medium-high prices but absolutely justified by the excellent food and quality of the products but not by the service in the room...

Fantastic atmosphere in this tuff cave, very kind and approachable staff, very friendly and smiling (which is not to be taken for granted).
It was me and my partner this evening, everything was excellent, very generous portions and genuine flavours.
I recommend the pignata and the ziti in the terrine to everyone, truly delicious, the ingredients are first choice, you can see it but above all you can taste it.
We took 2 starters, 2 first courses, 1 second course for two, 2 glasses of wine, water, oil (very good) and water, a total of €90, a fair price for the portions we received.
Well done everyone, we will definitely be back.

Very characteristic location in a Matera stone near the main street of Matera, excellent quality meat and wines, we ordered a mixed starter with Matera cured meats and cheeses and lamb ribs, all well cooked. Not large doses, average prices. Excellent for those who love tasting good wine!

An extraordinarily great meal in a great setting (built into a cave) with attentive staff.
We started with Beef tartare with Caramelized onions and the Matera bread balls with tomato sauce and basil. Both were excellent. For our main courses we had eggplant parmigiana and the orichette with a beef ragu. For both dishes, among the best we have ever had. With cocktails and wine, just 72 euros. Highly recommended.

In an internally totally typical and unique place, the hosts Giampiero and Stefano with their wives delight you with tasty dishes and more, refined dishes, refined oil and cellar of record wines.

We had a mixed experience. The food is lovely and we enjoyed that very much. Our waiter wanted us to order immediately whereas we wanted to have a cocktail first and order then. He eventually understood and we did some people watching.
We then ordered and everything arrived quickly - starter and mains. As I said already the food was very good. We had an aubergine tart to share followed by a pork dish for my wife and an entrecôte for me. We did not have room for dessert.
It never felt like somewhere to linger and enjoy the evening. Too fast !

We stayed 2 nights in Matera . Dined with our friends at Bollicine . Food was fabulous, attentive service , warm atmosphere!!
Highly recommend it . Great selection of wines .
I would recommend for appetizers typical bread balls ( staple for families once upon a time ) as meat was very scarce . Chicory served on broad bean purée .. first course , Ravioli stuffed with Burrata . Second course grilled local lamb ribs with herbs fennel & oregano .

The best food after 14 days of travelling around Italy. Very nice service too. We were seated without reservation after 3min waiting (with a dog). The place is beautiful.
We choosed typical Peperoni cruschi (don’t miss them!) and Frisedda as a starter, both lovely.
Than we choose pasta dishes: again local Orecchiette ragú and Paccheri with pines and local cheese, both outstanding.
Tiramisu and pistacchio tiramisu as deserts - balanced, perfect in sweetness and consistency.
Good coffee and wine.
Together with a pleasant service of several people always prepared to help and very nice we had an amazing experience in a cozy place. Highly recommended.

Nice and welcoming restaurant. Fast, precise service and very kind staff. We were served by Stefano who, with the love for his work, visible in his way of doing things, presented the dishes to us with skill and professionalism.

We had made a reservation, but arrived early, this wasn't at all a problem and we were quickly seated. My husband had slow cooked pork on mash, beetroot and fried Angel hair pasta. I had Carpaccio with red pepper sauce and pecorino - this was excellent and I ate the whole lot. Not sure though that the pistachio cheese cake was as fresh as it was supposed to be, but it was still good. The waiters were really on the ball and didn't miss a beat. Yes, the service was fast, but perfectly delivered. This is definitely a must when in Matera.
