There is a reason why this place is the #1 in Amsterdam: it's perfect. A great restaurant does not only have amazing food, it should focus on letting people live a beautiful food experience. The core value of Bougainville is in people working there: they...are wonderful, caring, never intrusive, sincerely interested in customers satisfaction. Obviously, cuisine is unbelievably good and they have a top-quality wine selection (I would say it suits every budget, taking into account the level of the restaurant).More

This is one of the very best restaurants, and without doubt the very best in Amsterdam. We went out for an ordinary evening expecting good food and service but ended-up having an extraordinarily good evening. From the first sip of house champagne (a delight) to...the last mouth-watering bite of petite fours, it was sensational. It is the equal of Thomas Keller's Per Se in NY, Alain Ducasse and Guy Savoy in Paris and Raymond Blanc at the Manoir in the UK, but, incredibly, a fraction of those prices. The menu is thoughtful, innovative and well balanced. The wine list is extensive with good choices at all price points. The tasting menu - 5, 6 or 7 courses - is a must as it showcases the kitchen's prodigious talent more fully than the al la carte menu. The food is cooked to perfection. It is exquisitely and stylishly presented but with an element of fun. The langoustine, cod, venison and wagyu dishes are outrageously good. The Blackberry desert is simply a taste sensation, and the Sommelier's choice of desert wine, from Lower Austria, was inspired. The petite fours were beyond delicious - madeleines with ras el hanout an example of their innovative style; the (seemingly slightly odd) combination really worked, they were sensational. Front of house, is similarly excellent. A genuinely warm and friendly greeting at the door, and attentive and knowledgeable table service. Service at its very best. The decor is clubbable, but modern with comfortable seating and perfect lighting. There is plenty of space between tables, all of which were taken and there is a good atmosphere - neither too noisy nor too quiet. They have plenty to be pretentious about, but they have no pretentions. This was a wonderful and memorable evening. A visit to this restaurant is a must - particularly after the long haul that has been the pandemic - it is good for mind, body and soul! No wonder they are fully booked on Fridays and weekends for the foreseeable future. We will be going back at the first opportunity!More

I went to Bougainville with an old friend to catch up over a nice dinner and we both ordered the 6 course tasting menu. We had 4 amuse which were creative and good and the courses commenced with corvina and langoustine which were both very...good. Next up was the cod/ossenworst which was well cooked but the cod was far too salty and threw off the whole dish. Then the celeriac root arrived and was barely cooked - it was like eating a raw vegetable - absolutely not what you would expect of a 1* restaurant. The venison and dessert were both good and rescued the meal. The interior was nice (a little predictable and old school) and the staff fantastic and choreographed! :-) Overall a plasant enough meal and evening but you don't expect 'pleasant' at a 1 michelin star restaurant and certainly don't expect the hiccups explained above. The restaurant didn't charge for the celeriac in the end.More

This was the best meal I have ever had. We had the 7-course meal with the matching 7 wines. Each dish was delicious and creatively displayed. I will definitely be coming back and I highly recommend.

The restaurant is a bit like a well choreographed spectacle. Waiters make movements like dancers when serving the dishes, which is fun to watch. Dishes themselves are also presented as a spectacle, whereas the starter with liquid nitrogen boiling over the table is a very...nice touch. Dishes are good. One outstanding dish which was the cod with ossenworst. Three types of dressing around it which made it spectacular. Winelist is extensive, although a bit overpriced.More

Beautiful place inside and out. The 7 course menu was incredibly tasty and surprising, not to mention the speed of the service and the friendly staff all around. Usually service is way slower in those kind of places but we enjoyed in the best way...possible the precious atmosphere and food. Definitely a michelin star restaurant to come back.More

What an amazing experience to eat at Bougainville. Lovely staff, every bite is a sensation. Highly recommended for vegetarians as well. We will be back!

My husband and I visited the restaurant over the August Bank Holiday weekend. We were immediately looked after by one of the staff who took us to the restaurant in a lovely lift. We were seated on really comfortable chairs and left to relax for...a bit before ordering drinks and the menu being explained. We opted for the 5 item tasting menu but also ordered the cheese before the last course. We could not fault anything. The highlight was the rice ice cream with crunchy rise and melon on the side. It was amazing. It was a lovely atmosphere and thee waiters and waitress were charming and were very knowledgeable when asked questions. We had an excellent evening. It was very expensive however it was worth it for the service and the atmosphere and we didn't leave the restaurant until 10 pm having been there from 6.45 pm so I think it was good value for money. Would definitely visit again in the future.More

Not really, after all i had been travelling for 5 weeks before going there, and didnt have really dressy clothes. Just as long as you are clean and tidy you will feel as though you fit in. They wouldn't judge you anyway... More
