Exceptional Sushi Experience! As a huge Sushi & Sashimi fan, am always on the lookout for new experiences! My dear friend recommended restaurant @Ashino @Chijmes ! Known as Edomae Sushi Ashino the restaurant is a Chef - Wife partnership, chef has hailed to our shores...roughly 11 years ago and established himself in the art of Aged Fish (actually more like marinated with the exception of the Tuna) and Chef Ashino has established himself as an expert in this speciality craft! The dining experience was truly unique & special, something really enjoyable! Subtle flavours, as marinades are kept at a sublime level! A destination for a true connoisseur! Will not go into the individual preparations/marinates as my focus lies on the enjoyment of the meal, which I totally did! But truly outstanding was the Baby Octopus, of course the Tuna, the lufe clam, the silver fish, the baby mackerel really did it for me! Chef is a friendly operator, but tough behind the scenes! I loved the counter layout and the fact that the sushi was served straight onto the wooden counter! Information is readily shared, and handy Print-outs are available for those that want a better understanding of some of the practices! Price value relationship was ok for me, but not for the faint hearted! Book in advance to avoid disappointment, a very popular place to visit for those in the know! As an avid omakase eater, I was surprised to try out new fish, that I've never tried before. The sushi rice and the technique of the sushi was flawless. Would definitely coke back again.

Lovely Edomae Style sushi. My favourite was the seasonal young salmon done with a light sear. So fresh and fatty!

Jukusei or aged sushi - this is where you will find one of the best exponents of ageing in Singapore. But that's only half the story. The other half is how they prepare the rice of shari. The rice is done old school, with enough...tangy acidity and firmness and at the correct temperature.More

While there are some fish that taste good, there isn’t a variety of fishes served. With the 400 per person set, there isn’t any wagyu or beef, mostly white fish. Also, the difference of sushi served compared to 450 per person set is too vast...to warrant the 50 dollar difference. We were told that the 450 dollar per person set has abalone, that’s it. What we saw were completely different because we saw that people who go for the 450 per person has lobster, 3 Uni, abalone and other dishes that we didn’t get. What was bizarre was the second uni we received which taste unfresh and to be honest, taste really awful! Told the Chinese chef but he said everything is fresh. I checked with my hubby and he agreed with me as we have one too many Omakase experience in Singapore and in Japan. Our set ends with fruits that don’t look very generous. Half a white strawberry, small orange, melon and mango. Mango is not even a Japanese fruit, can they select muscat grape or give one whole strawberry instead? To our surprise, we were also told that we don’t have ice cream in our set, but the chef gave them to us, which we appreciate. I would say that the quality, taste and rice do not make me want to return because there isn’t creativity in the sushi, taste wise it is pretty standard and all of them are smoky except for cuttlefish, the fish are cut so small and thinly and the rice keep falling apart. Everything is so-so except for the Baku uni which was really awful, and nothing really stands out positively.More

I was served an aged parrot fish nigiri that was smelly and stinky. My wife agreed with me of the unpleasant smell. A few gd pieces but generally everything is aged so a hardy stomach for those adventurous

Food is same excellent standard like usual. One thing I need to report is I still haven’t received my deposit Back which I paid for reservation. What should I do? Contact restaurant or chops?

I urged travellers and singaporean to try Chef Ashino. It is very good if he is serving. To be fair the 120 lunch at Shinji is better value but if u want aged sushi for an umpphhh . This is the place to go ....Better than hashida and sushi Kimura but behind Shinji and shoukouwa in my opinionMore

Had lunch omakase at Ashino. Pace for the meal was good and Chef was very nice and fluent in English. He explained each component accurately with details. The whole meal is very enjoyable . It will be beneficial if the restaurant include some price tag...for some items to avoid some confusion or unhappiness during the settlement of the bill.More

The food standard was amazing as always but for $250++ a head and we probably had around twelve pieces of sushi max and around three side dishes (special chawanmushi, fish done three ways, and another thing) then that was it? My friends and I were...still hungry. The meal ended up the egg custard cake. No nigiri. No maki. No nothing. Then came fruits. I believe if we had gone for the 120$ lunch set we most likely would have been more full. That explains why we were the only people there. Afraid that would be the last time we go there again. We paid for an Omakase but got half of one. One hour was all it took...More

I arrived without booking. I had the $120 menu plus 1 beer & some amazing sake. Not cheap but what an amazing experience. Honestly it’s a 9.5 out of 10. Very passionate owner/ chef. I will return next time I am in Singapore.

Chef Ashino and team are really friendly and authentic serving great aged sushi and other dishes. It was pleasant dining experience , with Koko the lead service team is really attentive and friendly. They may not have the freshest uni but other dishes are really...good. Sushi rice is warm and fish slices are cut perfectly.
