The charcuterie board was delightful. The Welsh Rarebit was delicious. The ambiance was relaxing yet upscale.

It was my first time here for dinner. I always order the very same thing ( ploughman's lunch) so it was fun to check out the rest of the menu. I ended up with my hand selection of cheeses, bread,crackers and olives. The waiter helped me with a couple of cheese suggestions as well as a delicious glass of wine.

If you like cheese this is your place! You can order cheese, "sushi style", with a check list and pencil or order off the menu. They have a small variety of dishes but I always get the Ploughman...a perfect lunch meal in my opinion. I've lived in Fort Collins all my life, and love the staples of Silver Grill, Pickle Barrel, Walrus and The Rio. But when the Welsh opened, I jumped at the chance to add to my favorites. A group pf 4 gals wanted something different todo this Saturday. We heard of the Weslch Rabbit in Ft.COllins and looked it up. My daughter in law is familiar with this restaurant and she knew I would love it. She was right! The portions you get are very small. Quite different from the other restaurants around which give you a decent size. The restaurant is small that has a few tables which you might be telling. Such a simple idea, but it works... It's fun and delicious. We had a great treat with a sampler platter and a couple add-ons, the roast duck is amazing. Loved the ice creams too! We WILL be back!

Delicious different dinner over Labor Day weekend. Attentive, helpful server who was also very welcoming. This Cheese Bistro offered a varied selection of meats and cheeses - enough that everyone was able to choose their favorites. Would definitely return here.

What a find! A cheese, wine and small plate eatery with an excellent cheese selection. Had seven cheeses, salads (one with duck) and a summer wine flight. All were excellent. They have GF crackers made from oat that were fabulous. We spent over an hour and indulged. It was definitely worthwhile. Server was quite knowledgeable and helpful.
