Stopped here with a friend while exploring the Colorado plains. We are always looking to try local and unique restaurants when we are out, so we were excited to find the Trading Post. Stopped here with another family of 4 on our way through on the 287, and had to wait an hour for our food to be served, which was very average. Whilst it was a Saturday, it wasn't very busy. We didn't have time for pie due to the time taken. My advice is if you're traveling south, then keep going... More

Stopped here for breakfast on our way to Canada. Friendly employee. I ordered the bacon and egg sandwich which was fine, but the hash browns could have been cooked longer. My husband had a bacon and egg breakfast with rye toast (which he liked), but he ordered his eggs over-easy and they were slightly overcooked.

Driving south on 287 in far Eastern Colorado after a great ski weekend and out of nowhere comes Kit Carson Trading Post Restaurant. It was after lunch time and the parking lot was full. When you drive across this country like me and my wife do, you come to appreciate authenticity. The food was very good and I would certainly recommend the restaurant on its merit alone. Had breakfast here. I had the skillet with bacon and green chilli. It was tasty, not too spicy, just mild enough for brekky. Good price and very nice service. Would recommend it.

If you are taking the short cut from Pueblo, CO to I70 which do, stop here for lunch. We were hungry and wanted gas and the name was too good to pass up. The food is excellent. Father & son road trip east across the Colorado plains. Found this little gem just before they closed for the night. AMAZING burgers, home-baked pies for dessert, and friendly, attentive staff, in spite of the "urge to close on time". HIGHLY recommended.
