WHEN IT IS UNREASONABLE TO ORDER OYSTERS Working in the fine restaurant business for even a short time, one comes to know about customers like R. Jane. Even when menus remind patrons that shellfish dishes often contain bits of shell and to be careful when ordering or simply order something else because the management will not be responsible for mishaps, one in every few hundred customers will come in to eat, order an expensive wine, order the Coquilles St. Jacques or similar, wait about eight and a half minutes, then call the server and manager because it seems they've broken a tooth. There are three ways to proceed. Tell the pearl joke and try to keep a straight face. Insist that the guest produce the injurious fragment. If they claim to have eaten it, politely offer to comp the dish in question - nothing more. Serve complimentary wine or dessert if there is any sign whatsoever that the patron is telling a shred of the truth. The size of the patron's greedy expectations is proportional to the planning and practice that went into this deception. Never be intimidated by this uncommon event. Last, the server might use gentleness and humor to tell patrons who order shellfish about the restaurant's policy, before putting in the order. A pearl! Good for you. Not that I am aware of, but most patrons wear what I would call upscale casual. This is not a t-shirt and shorts sort of place.
