Several locals told me about Cafe Pasqual's, in the heart of Santa Fe. The food was delicious, felt very authentic, and the service was excellent, in a fun and funky atmosphere.
Just look at the menu on-line and you'll see that this isn't the usual hash house. We stood in a short line at their 8 AM opening, and we weren't disappointed. Excellent food well presented.
