Is mid July too hot in Tuscany?
Will we need air-conditioned accommodations?
Unless you're staying at a fairly high elevation, I would want air conditioning. You may not need it, but it's better to have it and not turn it on than to need it and not have it.
July is generally the hottest month of the year.
July is very hot, if you're in a city like Florence (which sits inside a valley as opposed to on top of a hill that gets a breeze) many July nights remain as hot as during the day. In the countryside you will generally get a bit more "air" than in the city. So if you do want a comfortable night's sleep, try to find accommodation with AC, though keep in mind that many places won't necessarily have it. Beware of the tiger mosquitoes in the summer as well!
