Fridge magnets and maybe tshirts are a given but is there any souvenir that screams greece like khartouche for egypt and khanjars for oman?

Most places sell packets of fresh herbs, they weight very little and are much cheaper in Greece than in Britain. We usually bring back a couple of sets of coasters for the tea and coffee mugs. If you go to Athens, there's the famous mastika shop and there are many herb and spice shops on Evripidou St which crosses Athinas St just south of the markets. The most iconic image of Greece is probably the Acropolis in Athens, which you can find reproduced on all types of merchandise.
I second the herbs: do go to Evripidou to look and smell, even if you don't buy any herbs. It's a treat for the senses.
If you don't mind the weight, olive wood goods - salad bowls, cutting boards, wooden spoons, etc - are well made, beautiful, not awfully expensive, and couldn't be more Greek.
And of course Athenian owls are available in a huge assortment of materials and sizes and prices.
It does depend on what you can carry of course. Olives & olive oil & ouzo are very Greek - but not easy to pack/carry these days

I brought home two Greek icons that I now have hanging in my house and I smile every time I look at them. :)
There are many Komboloi (worry-beads) to choose from. Expensive and not so expensive - a nice keep-sake, and quite novel.
I like the olive oil products too...including the soaps and in particular the lovely hand creams, my particular favourite brand is Greek Secrets.
I recommend the small jars of local honey. Of everything we have ever brought home, these were the most popular.

Hey and welcome Bradz21:-) You've gotten some great suggestions! FWIW, the 'food' items are wonderful.. I always stock up on them but unfortunately, don't last long, lol;-) If you're looking for something that will last and 'scream' Greece.. other than the usual t-shirts and key chains, you may want to take a look at the gift shops at the Museums! I always find unique items there.. whether a poster (which can be a pain to pack.. but looks great once framed and hanging on the wall;-) to mugs and mouse pads depicting various archaeological sites to paper weights and statuettes.. even jewelry;-)
Uday, along with the Museum gift shops, if looking for a gold necklace, you may want to check some of the popular, albeit pricey jewelry shops to include Lalaounis and Zolota's with stores in Athens;-) Enjoy all!
Jewelery, icons, hand-made leather sandals, ceramics - the choice is endless. If you are in Athens, check out the gift shop at the Benaki Museum, the Center for Hellenic Tradition in the Plaka, and the shops on Makrygianni Avenue across from the New Acropolis Museum. I am very fond of the gift shop in the Benaki Pireos Avenue branch but it isn't open every day.
