Not sure what kind of budget you have but I recently stayed at the SAS Radisson Farnham Castle just outside Cavan town and was very impressed. Check out their website.
A lot of B&B's in the area. However Cavan house has never been much help with family history. If there is a Mormon family history center nearby visit that before you go.
Depending on your budget the Farnham Hotel or there are several B&B nearby. Don't know the frequency of busses to Bailieboro about 20 miles from Cavan town and sorry but I don't think that the mormons will be much help to you unless you know exactly how to link up your family tree.
My suggestion is to start at the new Cavan library, where they have a fine reference section. If you know exactly what adress/townland you are looking for then get hold of the 1901 +1911 census info available on microfilm. To check out the property you can get back to about 1854 with the Griffith Valuations also at the library. All of this can be checked out for free and will give you a good foundation and idea of where to go next.
Until you find out exactly who you are looking for I wouldn't bother with the Genealogy Centre. The library will help you with any further info. but you will need to allow for one full day in Bailieboro to check out church and graveyard etc. Check with the Bailieboro library too for local stuff.
