Safety during road travel from El Paso

We, a group of 11, are reaching El Paso Airport on the midnight of 15th and have our reservation in a hotel in Las Cruces, the checkin of which doesn't start till 3PM the next day.

Is it safe to travel by Uber/Lyft from El Paso Airport to Las Cruces at around 1AM or should we book a hotel/motel near the airport till noon and then move to Las Cruces?

I do not have any experience arriving into Las Cruces at 2:00 AM or thereabouts, but it is a relatively small town, at least as compared to El Paso. My thought would be that you would be better off staying in El Paso, where you and your family could at least likely find a 24-hour fast-food restaurant, either within the airport itself or somewhere nearby. Las Cruces may or may not have anything even open at that hour of the night, and you may not be able to find rooms in Las Cruces at that hour of the night. Moreover, you probably will have completed the last leg of a very long flight from New Delhi to somewhere in the USA, with a connecting flight (or flights) to El Paso. Why not wait until the next day to make the short trip to Las Cruces?

I really think you'll be okay. It's a small town, but there's a university (NM State) and at least two Denny's restaurants, two Whataburgers, and a Carl's Jr. open 24-hours. There's a Pilot Travel Center (truck stop) open all night if you just needed to hang out. When the sun comes up, there are multiple museums, Chihuahuan Desert Nature Park, Prehistoric Trackways National Monument (dinosaur footprints), etc.

And travel from El Paso should be perfectly safe. It's an Interstate highway all the way. Just depends if you're up for an all-nighter after flying. And, of course, if you will have a way to get around in Las Cruces. Las Cruces is not exactly a bustling tourist Mecca, so your already booked accommodation might be able to take you when you get in.
