The airport Staff Canteens at T1 & T2. Google for directions, articles, videos.
Even Anthony Bourdain mentioned it to the NYT last year.
I will definitely patronize the staff canteen of T1 and T2, much cheaper compared with eating the Mac and BK or any of the outlets at land or air side
If you are able to leave the transit area then go for the staff canteen for typical Singapore food. A bit tricky to find so ask any staff they will show you the directions.
The canteen staff is actually a food centre open to the public as well. You may notice double prices: one price for airport staff and a second slightly more (but reasonable) for non staff.

As already mentioned, take some time to google(its really easy to find) where to find the staff canteens in Terminal 1 and Terminal 2 of Changi Airport. These are the hidden gems that offer authentic, VERY cheap local Singaporean food.
ANYWHERE ELSE in Changi Airport, forget it. Food in Changi Airport outside of the staff canteens are often horrendously prepared, VERY expensive(6-8 Singapore dollars for a small bowl of noodles and soup is a goddamn RIPOFF, FYI) and no Singaporean with common sense ever eats there unless truly necessary. Food in that airport is priced often at 2-4 times the normal rate in Singapore, AKA a tourist trap.Edited: 17 March 2018, 23:40
