Phuket, Krabi, Ko Lanta? Visit 2 or all 3? Help me choose!

Hi ! We are a couple in our mid 50's planning to spend the month of January in Thailand/Cambodia.

We are fairly sure of our itinerary for the 1st 2 weeks but are undecided about how best to spend the 2nd 2 which we want to be at the beach.

Our priorities are;

Good 4 star hotels or similar, not huge.

Not over-run with kids.

Snorkelling from the beach

Day trips to other islands

Good food, not always in the hotel.

We do not want night life, bars, discos,

So far we are looking at 4 nights in Phuket, at Indigo Pearl [Good for day trips?] or Katathani [Snorkelling from the beach?]

4 nights in Krabi, maybe Railay West? Need good hotel please.

4 or 5 nights Ko Lanta, looking at Pimalai

Would it be better to split the beach stay in two and avoid too much travelling? How easy is it to get from one of these places to another?

If we were to do only 2 beach stops, which 2?

Any recommendations would be really appreciated.
