My kids loved Billings Farm and Museum. We have also visited Crowley Cheese Factory, Calvin Coolidge Historic Homestead and hiked the Quechee Gorge.
Long Trail Brewery for dinner is a must while you are in the area !

If you're willing to drive a little (nothing close in VT but driving is very low key and pretty), the Montshire Science Museum in Norwich is great hands on museum and perfect for children your age.
We also will go bowling in Rutland as another rainy day option. The bowling alley has bumpers for kids.
You also asked about the weather. I would suggest sweatshirts/sweater/light coats and probably long pants. Although you might get lucky during the day, still likely to get colder at night. Tomorrow going into the 30s at night which is unusually cold for August!
Also, if you are up for a ~1 hour drive, you can check out the Ben & Jerry's factory tour, if that's something you would be really interested in. But generally, I think the Woodstock area recommendations would be best.
IMHO, the B&Js tour is lackluster, and not worth a 2 hr roundtrip drive. Plenty of better things to see & do in the area.
