It’s always wonderful to discover a restaurant which a) cares hugely about finding the best, fresh local ingredients and b) is able to create original dishes which showcase those ingredients to great effect. Fargo is such a place - the bream ceviche was beautifully balanced and the Andalucian pork (served safely pink) was judged by my friend to be outstanding. The vegetarian croquettes as a starter were also a delightful combination of flavours. It’s a very comfortable, quiet restaurant which is great for vegans and vegetarians but which offers plenty to keep meat eaters very happy.
