There are quite a few great restaurants in Arosa but this one is a must visit. I went here to meet a friend, and was immediately greeted and ushered to her table. The set- up is cosy casual, with options for more or less privacy, as desired or space permitting. The concept works, and on a cold, wintry evening a place like this combines warmth, class and great food - without being pretentious.
I had a cut of tenderloin, thin sliced with vegetables, a very creative salad (great home made sauce!) and an excellent wine to go with it.
Staff was friendly. Only downer for me is the spreading fad of charging for water. The Swiss gastronomy scene recognized suddenly that their clientele had discovered tap water in Switzerland is better (and more environmentally friendly than the bottled sort), and that they were losing revenue to people asking for tap water. They started charging for the water by putting it in special containers, sometimes chilling it. The justification for the charge differs between supporting some "water project" in Africa, paying for the "cost" of cleaning the bottle, etc. I usually respond by saying they have a choice between receiving my customary tip and not paying for the water, or no tip and my paying.
In the case of Bullrian they have imported this unpleasant practice of charging from Zurich. I saw it on the bill, but forgave them for it for the superb service I received. A sign how good the restaurant was... I'm usually not so forgiving. I rate the restaurant 5 star.
