This ristorante is a little jewel in a town already famed for its gastronomy. Many eateries in Puglia serve excellent food with fresh local ingredients but this place takes it up a notch in terms of imagination, creativity and flavour. The 7-dish antpasti is a must for starters, including such delights as salami, fig and cheese bruschetta drizzled with a syrupy balsamic, smoked pork topped with pickled cabbage and fruits of the forest, light and crispy eggplant balls in tomato sauce, fried chicken in sweet and sour sauce, zucchini and cheese soufflé, fava beans and bacon with crispy toast, and local ricotta with honey, nuts and figs. After that there are wonderful pasta dishes (we had the pesto pistacchio and the mushroom and truffle tagliattelli - both were superb). Unfortunately by this stage we were too full to be able to contemplate ordering more, but suffice to say the mains looked similarly tempting. Service was similarly excellent. Divine dining - a must if you're in San Michele Salentino.
