Eating at Shiraishi is always a treat. Chef Shiraishi always recommend the best seasonal food from Japan. The sashimi and sushi are always excellent. We had the Sakura Ebi tempura which is the seasonal Cherry Blossom scrimps. Very delicious. We will be going again next week when the Japanese oysters are in season.

We had a great meal! My husband, who grew up in Japan and is very hard to please with sushi, said this is one of the best places he's been to and even went back a second time after I left Singapore. It is pricey, but really good sushi tends to be expensive. We sat at the sushi bar and the chefs were so nice and friendly. We had an amazing time and will make this one of our regular places when we move to Singapore this summer.

Sushis & Sashimis are good, but ridiculously small (a sashimi moriawase for 2/3 person is 8 pairs of tiny slices of fish and costs 120 SGD). Overall we paid around 800 SGD for 4 person. Our feeling was that both quality and quantity didn't worth 200 sgd per person...

Shiraishi is located inside the Ritz Carlton Hotel Singapore.

Now in business for 13 years, its run by the head chef, Shiraishi san as an independent contractor - its not a direct operation of the Ritz Carlton.

If you are looking for inside out crab mayo volcano rolls don't come here. (read to my review of Sansei on Maui posted last month) Go to Sakai Sushi, in Marina Mall located nearby - its cheaper and you will get this type of inauthentic sushi comfort food.

But if you are ready for the authentic sushi of Japan, Shiraishi is it. Most ingredients are imported directly from Tsukiji on a scheduled basis. The chefs, a mix of Japanese and highly skilled Singaporeans, have mastered the high art of sushi to a degree rarely found outside Japan.

You will pay for this privilege. Our bill for two, the makase course, with a few shochus to go with it came to S$550. If that's scary, don't go. Go only if you want the real Japanese sushi from a friendly master and feel lucky you were able to eat this incredible meal outside of Japan.

If you really like the real sushi and are in Singapore, then Shiraishi is the place. Perhaps the best sushi restaurant outside of Japan, its worth the price if you have the S$$$$. Spend it, its worth it.
